Borshch is a Russian and Ukrainian traditional soup. Because of beetroots borshch has easily recognizable beautiful red color. Other ingredients are carrot, potato, cabbage, it is usually served with smetana.
Borshch comes from rich variety of Russian soups; shchi, okroshka, fish soups, solyanka remain very popular on Russian table. Some soups like shchi were every day dish while others had a special purpose. Interestingly, for example, there was a salty soup called “hang-over” which was cooked to fight hang over after a merry feast. In general, high diversity of Russians soups is connected with Russian heavy drinking according to some researchers.
